Sustainability

Malama is the Hawaiian word meaning to care for or nourish, particularly that which sustains you.  For some time it has been my favorite Hawaiian word and holds great significance for us here at Capische – not only in its literal meaning but also philosophically. Like when you were young and Mom or Dad or another relative made a special pot of soup when you were sick.  You could feel their love transcend the ingredients -- it was made from the heart.

 

Part of how we incorporate the ideal of malama in our day-to-day pursuit of excellence involves the ingredients we use.  Along with the Hotel Wailea we have taken a major step toward sustainability and local quality by planting our own farm.  Now, from seed to sauté, I can honestly serve you a dish we have nourished in every way.  I believe you will taste the difference.

 

Since becoming a father, I have also learned the importance of malama as related to nurturing and teaching our future generations.  Along with my good friend and successful Maui chef, Dan Fiske, we are sponsoring the South Maui School Garden Project at Kihei Elementary School.  Being involved with this project and the students has been rewarding and motivating.  I encourage everyone to get active in sharing your life skills and passions with the children and youth in your own community.
